Slow-Roasted Garlic, Honey & Mustard Lamb Shoulder
👉Ingredients:
◾️3 to 4 lbs bone-in lamb shoulder
◾️6 garlic cloves, thinly sliced
◾️3 tablespoons whole-grain mustard
◾️3 tablespoons honey
◾️¼ cup olive oil
◾️1 teaspoon fresh rosemary, chopped
◾️1 teaspoon fresh thyme leaves
◾️Zest and juice of 1 lemon
◾️Salt and freshly ground black pepper, to taste
👉Instructions:
↪️1. Preheat your oven to 275°F (135°C).
↪️2. Pat the lamb dry with paper towels. Use a sharp knife to make small slits all over the lamb, and tuck the garlic slices into the slits.
↪️3. In a bowl, mix together the mustard, honey, olive oil, rosemary, thyme, lemon zest, lemon juice, salt, and pepper.
↪️4. Rub this mixture generously all over the lamb shoulder, coating it well.
↪️5. Place the lamb in a deep roasting pan or Dutch oven. Cover tightly with foil.
↪️6. Roast in the oven for 4 to 5 hours, until the meat is incredibly tender and pulls away from the bone easily.
↪️7. Remove the foil, raise the oven temperature to 425°F (220°C), and roast for another 15–20 minutes until the outside is golden and caramelized.
↪️8. Let the lamb rest for 15 minutes before slicing and serving.
