✅️ Cajun Chicken with Sun-Dried Tomato & Spinach Mac & Cheese
A creamy, cheesy mac and cheese with a bold Cajun kick—topped with juicy chicken, sundried tomatoes, and fresh spinach. Comfort food with a twist!
๐ Ingredients:
◾️ For the Cajun Chicken:
➡️ 2 large chicken breasts, sliced in half lengthwise
➡️ 1 tbsp olive oil
➡️ 1 tbsp Cajun seasoning
➡️ Salt & pepper, to taste
◾️ For the Mac & Cheese:
➡️ 2 cups elbow macaroni (or pasta of choice)
➡️ 2 tbsp butter
➡️ 2 cloves garlic, minced
➡️ 2 tbsp all-purpose flour
➡️ 2 cups milk
➡️ 1 cup heavy cream
➡️ 1½ cups shredded cheddar cheese
➡️ 1/2 cup grated Parmesan cheese
➡️ 1/2 cup sun-dried tomatoes, chopped
➡️ 2 cups fresh spinach, chopped
➡️ Salt & pepper, to taste
๐ Directions:
◾️ Cook the Chicken:
➡️ Season chicken with Cajun spice, salt, and pepper.
➡️ Heat oil in a skillet over medium heat, sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
◾️ Cook the Pasta:
➡️ Boil pasta until al dente, drain, and set aside.
◾️ Make the Sauce:
➡️ In the same skillet, melt butter, sautรฉ garlic for 1 minute.
➡️ Stir in flour, cook 1 minute.
➡️ Slowly whisk in milk and cream, cook 3–5 minutes until thickened.
◾️ Add Cheese & Flavorings:
➡️ Stir in cheddar and Parmesan until creamy.
➡️ Mix in sun-dried tomatoes and spinach, cook until spinach wilts.
➡️ Season with salt & pepper.
◾️ Combine & Serve:
➡️ Add pasta to the sauce, mix well.
➡️ Slice Cajun chicken and serve on top.
➡️ Garnish with parsley (optional).
