✅ Slow Cooker Guinness Beef Stew


◾️ Ingredients:

๐Ÿ”น️1 ½ lbs beef stew meat, diced

๐Ÿ”น️5 oz bacon, diced

๐Ÿ”น️2 medium carrots, sliced

๐Ÿ”น️2 medium onions, sliced

๐Ÿ”น️2 medium potatoes, diced

๐Ÿ”น️3 cloves garlic, minced

๐Ÿ”น️1 celery stalk, chopped

๐Ÿ”น️1 tbsp tomato paste

๐Ÿ”น️3 tbsp Worcestershire sauce

๐Ÿ”น️2 cups Guinness beer

๐Ÿ”น️1 cup beef broth

๐Ÿ”น️1 tsp dried rosemary

๐Ÿ”น️1 tsp dried thyme

๐Ÿ”น️2 bay leaves

๐Ÿ”น️1 tbsp olive oil

๐Ÿ”น️1 tbsp cornstarch

๐Ÿ”น️Fresh thyme for garnish


✅️ Directions:

↪️1. Heat olive oil in a skillet. Toss beef with cornstarch, then brown for about 5 minutes. Set aside.


↪️2. In the same pan, cook the bacon until crispy, then set aside with the beef.


↪️3. Add all the veggies, herbs, Guinness, beef broth, Worcestershire sauce, and tomato paste into the slow cooker.


↪️4. Stir in the browned beef and bacon. Cover and cook on LOW for 8 hours.


↪️5. Serve hot with creamy mashed potatoes and garnish with fresh thyme (optional).
