✅ Slow Cooker Guinness Beef Stew
◾️ Ingredients:
๐น️1 ½ lbs beef stew meat, diced
๐น️5 oz bacon, diced
๐น️2 medium carrots, sliced
๐น️2 medium onions, sliced
๐น️2 medium potatoes, diced
๐น️3 cloves garlic, minced
๐น️1 celery stalk, chopped
๐น️1 tbsp tomato paste
๐น️3 tbsp Worcestershire sauce
๐น️2 cups Guinness beer
๐น️1 cup beef broth
๐น️1 tsp dried rosemary
๐น️1 tsp dried thyme
๐น️2 bay leaves
๐น️1 tbsp olive oil
๐น️1 tbsp cornstarch
๐น️Fresh thyme for garnish
✅️ Directions:
↪️1. Heat olive oil in a skillet. Toss beef with cornstarch, then brown for about 5 minutes. Set aside.
↪️2. In the same pan, cook the bacon until crispy, then set aside with the beef.
↪️3. Add all the veggies, herbs, Guinness, beef broth, Worcestershire sauce, and tomato paste into the slow cooker.
↪️4. Stir in the browned beef and bacon. Cover and cook on LOW for 8 hours.
