3 lbs beef chuck roast
4 cups beef broth

4 large potatoes, peeled and chopped
½ cup butter
½ cup milk or heavy cream

✅ For the Gravy:
2 tbsp flour
1 cup beef drippings (from roast)
1 cup beef broth (if needed to thin the gravy)

1. Preheat the oven
↪️ Set to 300°F (150°C).
2. Sear the roast
↪️ Heat olive oil in a Dutch oven over medium-high heat.
↪️ Season roast with salt and pepper.
↪️ Sear all sides (4–5 mins each) until browned. Remove and set aside.
3. Cook the veggies
↪️ In the same pot, sautรฉ onions, garlic, and carrots for 2–3 minutes.
↪️ Add beef broth, thyme, and rosemary.
↪️ Return roast to the pot, cover, and transfer to oven.
↪️ Bake for 3–4 hours, or until the meat is tender and falling apart.
4. Make mashed potatoes
↪️ Boil potatoes in salted water for 15–20 minutes.
↪️ Drain and mash with butter and milk.
↪️ Season with salt and pepper to taste.
5. Make the gravy
↪️ Strain beef drippings into a saucepan.
↪️ Melt butter and whisk in flour to create a roux.
↪️ Gradually whisk in the drippings and broth.
↪️ Simmer until thickened and smooth.
