π Cheesy Chicken Tortellini Soup
A creamy, comforting soup packed with tender chicken, cheesy tortellini, and fresh spinach – a guaranteed hit!
✅️ Ingredients:
◾️ 1 medium yellow onion, diced
◾️ 1/3 cup all-purpose flour
◾️ 1 Tbsp dried basil
◾️ 2 cloves garlic, minced
◾️ 2 Tbsp tomato paste
◾️ 3 Tbsp olive oil
◾️ 4 cups chicken broth
◾️ 2 (14.5 oz) cans petite diced tomatoes
◾️ 1–1 1/2 lbs boneless, skinless chicken thighs
◾️ 1 tsp salt
◾️ 1/2 tsp pepper
◾️ 4 cups frozen cheese tortellini (or fresh)
◾️ 3 cups packed spinach (or more to taste)
◾️ 1/2 cup Parmesan cheese
◾️ 1 cup heavy cream (or half-and-half, warmed)
✅️ Instructions:
π Step 1 – Prepare the Base
In a microwave-safe bowl, combine onions, flour, basil, garlic, tomato paste, and olive oil. Microwave 5 minutes, stirring every 90 seconds. (It will look pasty—don’t worry!)
π Step 2 – Slow Cook the Chicken
Transfer mixture to slow cooker. Add broth, diced tomatoes, chicken, salt, and pepper. Stir.
Cover and cook:
◾️ LOW for 4–6 hours or
◾️ HIGH for 3–4 hours until chicken is tender.
π Step 3 – Add Tortellini & Spinach
Remove chicken from slow cooker. Add tortellini, spinach, Parmesan, and warmed cream.
π Step 4 – Shred Chicken & Finish Cooking
Shred chicken into bite-size pieces and return to slow cooker. Cook on HIGH for 10 more minutes until tortellini is done.
