π₯ Grilled Chicken Greek Salad with Tzatziki
✅ Ingredients
➡️For the Chicken:
2 chicken breasts (or thighs) π
2 tbsp olive oil π«
Juice of 1 lemon π
2 garlic cloves, minced π§
1 tsp oregano πΏ
Salt & pepper
➡️For the Salad:
Romaine or mixed greens π₯¬
Cherry tomatoes π
Cucumber π₯
Red onion π§
Kalamata olives π«
Feta cheese π§
➡️For the Tzatziki:
1 cup Greek yogurt π₯
½ cucumber, grated & drained π₯
1 garlic clove, minced π§
1 tbsp lemon juice π
1 tbsp dill or mint πΏ
Salt & pepper
πΉ Instructions:
1. Marinate & Grill Chicken π Mix olive oil, lemon, garlic, oregano, salt & pepper. Marinate chicken 30 min, then grill 5–6 min per side until cooked. Rest & slice.
2. Make Tzatziki π Mix yogurt, cucumber, garlic, lemon, dill/mint, salt & pepper. Chill.
3. Assemble Salad π Layer greens, tomatoes, cucumber, onion, olives & feta. Top with grilled chicken and a big spoon of tzatziki.
π‘ Tips
◾️Drain cucumber well for creamy tzatziki.
◾️Marinate chicken longer for deeper flavor.
◾️Add quinoa or couscous for a heartier meal.
π₯ Serving idea: Delicious with warm pita bread or as a healthy power bowl with rice or quinoa.
