π§Ύ Ingredients (Serves 2–3)
◾️π Garlic & Herb Chicken with Veggies
◾️1 lb boneless, skinless chicken breasts, cut into strips
◾️1 tbsp olive oil π«
◾️3 cloves garlic, minced π§

◾️1 tsp dried basil πΏ
◾️½ tsp dried thyme πΏ
◾️8 oz cremini mushrooms, sliced π
◾️1 red bell pepper, sliced πΆ️
◾️1 zucchini, sliced π₯

◾️ Crispy Garlic-Parmesan Roasted Potatoes
◾️2 medium Yukon Gold potatoes, cubed (½-inch) π₯
◾️2 tbsp olive oil π«
◾️2 cloves garlic, minced π§
◾️¼ cup grated Parmesan π§
◾️½ tsp dried oregano πΏ
◾️Salt & black pepper π§ to taste
◾️ Creamy Sun-Dried Tomato Mushroom Alfredo
◾️2 tbsp butter π§
◾️4 oz cremini mushrooms, sliced π
◾️¼ cup sun-dried tomatoes (oil-packed), drained & chopped π
◾️2 cloves garlic, minced π§
◾️1½ cups heavy cream π₯
◾️½ cup grated Parmesan π§
◾️½ cup shredded mozzarella π§
◾️Salt & black pepper π§ to taste
π₯ Instructions:
1️⃣ SautΓ© the Chicken & Veggies
In a large skillet or wok, heat olive oil over medium-high heat. Add chicken, garlic, oregano, basil, thyme, salt, and pepper. Cook until browned and cooked through. Add mushrooms, bell pepper, and zucchini. Stir-fry until tender-crisp. Remove and set aside.
2️⃣ Roast the Potatoes
Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, garlic, Parmesan, oregano, salt, and pepper. Spread on a baking sheet and roast 20–25 min, flipping halfway, until golden and crispy.
3️⃣ Make the Creamy Sauce
In the same skillet (or a clean one), melt butter over medium heat. Add mushrooms and garlic; cook until softened. Stir in sun-dried tomatoes. Pour in cream, bring to a gentle simmer, and stir in Parmesan until smooth. Season with salt and pepper.
4️⃣ Add Mozzarella & Combine
Return chicken and veggies to the skillet. Stir to coat in the Alfredo sauce. Sprinkle mozzarella over top, cover, and let melt until gooey.
