Spicy Sausage & Veggie Soup
👉Ingredients:
🔸️1 lb (450g) spicy sausage, sliced
🔸️1 tbsp olive oil
🔸️4 cups chopped cabbage
🔸️1 cup chopped celery
🔸️1 cup shredded carrots
🔸️1 cup spinach or kale
🔸️4 cups beef or chicken broth
🔸️1 can (14.5 oz / 400g) diced tomatoes
🔸️1 tbsp tomato paste
🔸️2 garlic cloves, minced
🔸️1 tsp paprika
🔸️1 tsp Italian seasoning
🔸️Salt and pepper to taste
👉Instructions:
✅️1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
✅️2. Add garlic, celery, and shredded carrots. Sauté for about 2 minutes.
✅️3. Stir in the chopped cabbage, diced tomatoes (with juice), broth, tomato paste, paprika, Italian seasoning, salt, and pepper.
✅️4. Bring to a boil, then reduce heat and let it simmer for 20–30 minutes, until vegetables are tender.
✅️5. Add spinach or kale and simmer for another 5 minutes.
✅️6. Serve hot and enjoy!
