Easy Taco Style Beef Casserole



👉Ingredients:

↪️1 pound lean ground beef

↪️1 can Ranch Style beans (or seasoned chili beans)

↪️1 (10–12 oz) bag tortilla chips, crushed – use as needed

↪️1 can Ro-Tel tomatoes (diced tomatoes with green chilies)

↪️1 small onion, chopped

↪️2 cups shredded cheddar cheese, divided

↪️1 packet taco seasoning

↪️1 can cream of chicken soup

↪️1/2 cup water

↪️For serving: sour cream and salsa


👉Instructions:

✅️1. Cook the meat: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any extra grease.

✅️2. Make the filling: Add the beans, Ro-Tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water to the beef. Stir well and let it simmer on low for about 5–10 minutes to blend the flavors.

✅️3. Layer the casserole: Grease a 9×13 inch baking dish. Spread a layer of crushed tortilla chips on the bottom, followed by a layer of the meat mixture, then sprinkle half of the cheddar cheese. Repeat the layers again and finish with the remaining cheese on top.

✅️4. Bake: Cover with aluminum foil and bake at 325°F (160°C) for 20–30 minutes, or until hot and bubbly.

✅️5. Rest and serve: Let the casserole sit for 5–10 minutes before serving. Top each serving with sour cream and salsa if desired.

▶️1. Use sturdy tortilla chips so they don’t get soggy. You can lightly toast them in the oven first for extra crunch.

▶️2. Add heat if you like it spicy – throw in diced jalapeños or a bit of hot sauce with the meat.
