 Hearty Veggie Casserole(Low-Cal & Filling!)


👉Ingredients:

🔹️🔹️For the vegetables:

↪️1 head broccoli, cut into florets

↪️1 head cauliflower, cut into florets

↪️1 red bell pepper, sliced

↪️1 yellow bell pepper, sliced

↪️1 cup cherry tomatoes, halved

↪️1 green Spanish onion, chopped

↪️1 cup chopped Spanish leaves (optional, like spinach or parsley)

↪️1/4 cup olive oil

↪️1 tsp Italian seasoning

↪️1/2 tsp salt

↪️1/4 tsp black pepper


🔹️🔹️For the egg mixture:

↪️4 large eggs

↪️1/2 cup milk

↪️1/4 cup all-purpose flour

↪️1/4 tsp salt

↪️1/4 tsp black pepper


👉Instructions:

✅️1. Prep the Veggies:

◾️Preheat oven to 400°F (200°C).

◾️In a large bowl, toss all the vegetables with olive oil, seasoning, salt, and pepper.

◾️Spread evenly in a 9x13-inch baking dish.


✅️2. Mix the Eggs:

◾️In a separate bowl, whisk together eggs, milk, flour, salt, pepper, and Spanish leaves (if using).


✅️3. Bake It Up:

◾️Pour the egg mixture evenly over the vegetables.

◾️Bake for 25–30 minutes, until set and golden.
