Moroccan Chicken Tagine with Olives

๐ŸŒฟ Moroccan Chicken Tagine with Olives & Preserved Lemon ๐Ÿ‹๐Ÿ—

๐Ÿ‘‰Ingredients:

๐Ÿ”น️1 whole chicken, cut into pieces

๐Ÿ”น️2 medium onions, finely chopped

๐Ÿ”น️3 garlic cloves, minced

๐Ÿ”น️3 tablespoons olive oil

๐Ÿ”น️1/2 cup water

๐Ÿ”น️3.5 oz (about 1/2 cup) green olives, pitted

๐Ÿ”น️1 preserved lemon, sliced

๐Ÿ”น️1 teaspoon ground ginger

๐Ÿ”น️1/2 teaspoon turmeric

๐Ÿ”น️Salt and black pepper to taste

๐Ÿ”น️A handful of chopped cilantro and parsley

๐Ÿ‘‰Instructions:

✅️1. In a large pot or tagine over medium heat, add the olive oil, chopped onions, and garlic. Sautรฉ until soft.

✅️2. Add the chicken pieces and season with ginger, turmeric, salt, and pepper. Stir well and cook until the chicken starts to brown slightly.

✅️3. Pour in the water, cover, and let it simmer for about 30 minutes.

✅️4. Add the green olives and slices of preserved lemon. Let everything cook uncovered until the sauce thickens a bit.

✅️5. Sprinkle with chopped parsley and cilantro before serving.

๐Ÿ‘‰ 3 Tips for the Best Tagine:

๐Ÿ”ธ️1. Milder olives: If your olives are too salty, soak them in warm water or boil them for a couple of minutes before adding.

๐Ÿ”ธ️2. Lemon balance: Preserved lemon is strong! Just a few slices are enough to give that unique Moroccan flavor without overpowering the dish.

๐Ÿ”ธ️3. Golden flavor: Browning the chicken at the start brings out a deeper, richer taste in the sauce.

Enjoy with warm bread or fluffy couscous!
