🍲 Hearty Beef Stew
👉Ingredients:
➡️ 2 pounds stewing beef, cut into 1-inch cubes
➡️ 2 tablespoons vegetable oil
➡️ 4 cups beef broth
➡️ 1 onion, chopped
➡️ 4 cloves garlic, minced
➡️ 2 bay leaves
➡️ 1 teaspoon dried thyme
➡️ 1 teaspoon dried rosemary
➡️ 4 large carrots, sliced
➡️ 4 medium potatoes, cubed
➡️ 2 cups frozen peas
➡️ Salt and pepper to taste
➡️ Chopped fresh parsley for garnish (optional)
👉Preparation:
🔹 Brown the Beef: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.
🔹 Sauté Onions & Garlic: In the same pot, add onions and garlic. Cook until onions are translucent.
🔹 Deglaze the Pot: Pour a bit of beef broth into the pot, scraping up browned bits from the bottom.
🔹 Add Remaining Ingredients: Return beef to the pot. Add remaining beef broth, bay leaves, thyme, rosemary, salt, and pepper.
🔹 Simmer: Bring to a boil, then reduce heat to low. Cover and simmer 1.5–2 hours until beef is tender.
🔹 Add Vegetables: Stir in carrots and potatoes. Simmer for 30 more minutes until vegetables are tender.
🔹 Add Peas: 5 minutes before serving, add frozen peas and heat through.
✅ Serve: Remove bay leaves. Adjust seasoning if needed. Garnish with parsley. Serve hot and enjoy!
