➡️ 3 lbs chuck roast

➡️ 2 tbsp tomato paste

➡️ 4 potatoes, peeled & quartered

2. ✅️ Heat olive oil in a large pot over medium-high heat, then sear the beef until browned on all sides.

3. ✅️ Add onion, carrots, celery, and garlic. Cook for 5 minutes until softened.

4. ✅️ Stir in tomato paste, thyme, beef broth, and red wine. Bring to a gentle simmer.

5. ✅️ Cover the pot and transfer to the oven at 325°F (165°C) for 3 hours.

6. ✅️ Add potatoes and cook 1 more hour until the beef is fork-tender.

7. ✅️ Serve hot with veggies and rich gravy.
