✅️ Zesty Coconut Lime Chicken Curry in the Slow Cooker
πΉ️ Ingredients:
◾️ 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into chunks
◾️ 1 onion, finely chopped
◾️ 3 garlic cloves, minced
◾️ 1 tbsp fresh ginger, grated
◾️ 1 red bell pepper, sliced
◾️ 1 cup full-fat coconut milk
◾️ 1/4 cup chicken broth
◾️ Juice & zest of 2 limes
◾️ 2 tbsp red curry paste
◾️ 1 tbsp fish sauce (optional)
◾️ 1 tsp ground turmeric
◾️ 1 tsp ground cumin
◾️ Salt & pepper, to taste
◾️ 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
◾️ Fresh cilantro & lime wedges (for garnish)
◾️ Cooked jasmine rice (to serve)
▶️ Directions:
1. π Add chicken, onion, garlic, ginger, bell pepper, coconut milk, chicken broth, lime juice & zest, curry paste, fish sauce (if using), turmeric, cumin, salt, and pepper into the slow cooker.
2. π Stir gently to combine.
3. π Cover and cook:
LOW for 6–7 hours
HIGH for 3–4 hours
4. π (Optional) Stir in cornstarch slurry in the last 30 minutes to thicken.
5. π Taste and adjust seasoning.
6. π Serve hot over jasmine rice, garnish with cilantro & lime.
