👉Ingredients:
2 lbs bone-in beef short ribs
1 tbsp olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 carrots, finely chopped
2 celery stalks, finely chopped
1 can (28 oz) crushed tomatoes
1/4 cup tomato paste
1 cup red wine (optional, or substitute with beef broth)
2 cups beef broth
1 tsp dried oregano
1 tsp dried thyme
2 bay leaves
Salt and pepper to taste
Fresh basil or parsley for garnish
Cooked pappardelle, rigatoni, or your favorite pasta

✅️Sear the Short Ribs:
Season short ribs generously with salt and pepper.
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Sear short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.
✅️Sauté the Vegetables:
In the same pot, add chopped onion, carrots, and celery.
Sauté for 5-6 minutes until softened.
Stir in minced garlic and cook for another minute until fragrant.
✅️Deglaze with Wine:
Pour in red wine (or beef broth) and scrape up any browned bits from the bottom of the pot.
Let the wine simmer for 2-3 minutes to reduce slightly.
Add the Tomatoes and Herbs:
Stir in crushed tomatoes, tomato paste, beef broth, oregano, thyme, bay leaves, salt, and pepper.
Return short ribs to the pot, ensuring they are mostly submerged in the sauce.

Once short ribs are tender, remove them from the pot.
Shred the meat with two forks, discarding bones and any excess fat.
Return shredded meat to the pot and stir into the sauce.
