1 lb ribeye or sirloin steak, diced
4 large russet potatoes, peeled and diced
1 medium onion, chopped
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup beef broth
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
4 slices cooked bacon, crumbled
Fresh chives, chopped (optional, for garnish)
👉Directions:
↪️Heat olive oil in a large skillet over medium heat. Add the diced steak and sear on all sides for 4-5 minutes until browned. Remove from heat.

↪️Add the seared steak to the crockpot and mix everything together. Cover and cook on low for 6-7 hours or until the potatoes are tender.
↪️About 30 minutes before serving, stir in the sour cream, cheddar cheese, and mozzarella cheese. Cover and cook for the remaining time until the cheese is melted and bubbly.
