Easy Homemade Chicken Potato Rolls
These soft, fluffy rolls are made with mashed potato dough and stuffed with a creamy, cheesy chicken filling. They're golden on the outside, soft on the inside, and totally comforting. Perfect for lunch, dinner, or even a snack!

◾️2 tablespoons unsalted butter, softened
◾️1 egg

◾️1½ cups cooked chicken, shredded or chopped
◾️½ cup shredded cheese (mozzarella, cheddar, or both)
◾️2 tablespoons mayo or cream cheese
◾️1 garlic clove, minced
◾️1 teaspoon chopped fresh herbs (parsley, thyme, or dill)
◾️Salt and pepper, to taste
👉Instructions:
✅️1. Make the Dough:
In a large bowl, mix warm milk and yeast. Let it sit for 5 minutes until foamy.
Add mashed potatoes, sugar, salt, butter, and egg. Stir to combine.
Add flour gradually, mixing until a soft dough forms. Knead for 5–7 minutes until smooth and stretchy.
Cover the bowl and let the dough rise in a warm spot for about 1 hour, or until it doubles in size.

In a bowl, combine the chicken, cheese, mayo or cream cheese, garlic, herbs, salt, and pepper. Mix well and set aside.

Punch down the dough and divide it into 8–10 equal pieces.
Flatten each piece into a circle, add a heaping tablespoon of filling to the center, and pinch the edges together to seal.
Place seam-side down on a baking sheet lined with parchment paper.

Cover the rolls with a clean towel and let them rest for 20–30 minutes while you preheat the oven to 375°F.
