There’s nothing like a bowl of warm Irish beef stew on a cold day.
Rich, tender beef, hearty veggies, and that deep savory broth (with a splash of Guinness!) — it’s the ultimate comfort food straight from the Emerald Isle! ๐ฎ๐ช๐
๐ Ingredients:
◾️2 lbs stewing beef, cut into chunks
◾️2 tbsp vegetable oil
◾️2 onions, chopped
◾️2 cloves garlic, minced
◾️4 carrots, peeled and sliced
◾️4 potatoes, peeled and cubed
◾️2 tbsp tomato paste
◾️4 cups beef broth
◾️1 cup Guinness beer (optional, but authentic)
◾️1 tbsp Worcestershire sauce
◾️1 tsp dried thyme
◾️Salt & black pepper, to taste
◾️Fresh chopped parsley, for garnish
๐จ๐ณ Instructions:
1️⃣ Brown the Beef
Heat oil in a large pot over medium-high heat.
Add beef chunks and sear until browned on all sides. Remove and set aside.
2️⃣ Sautรฉ Onions & Garlic
In the same pot, add onions and garlic. Cook for 5 minutes until soft and fragrant.
3️⃣ Add the Veggies
Toss in carrots and potatoes. Cook for 5 more minutes, stirring occasionally.
4️⃣ Stir in Tomato Paste
Mix in the tomato paste and cook for 1–2 minutes to build that deep, rich base.
5️⃣ Build the Stew
Return beef to the pot. Add beef broth, Guinness (if using), Worcestershire, thyme, salt, and pepper. Stir well.
6️⃣ Simmer Low & Slow
Bring to a gentle boil, then reduce heat to low.
Cover and simmer for about 2 hours, until beef is fork-tender and flavors are well blended.
7️⃣ Final Touch
Taste and adjust seasoning if needed.
Serve hot, garnished with chopped fresh parsley.
