✅️ 2 lbs (900 g) beef chuck roast
✅️ Salt & pepper, to taste
✅️ 2 tbsp olive oil
✅️ 1 large onion, diced
✅️ 3 garlic cloves, minced
✅️ 2 carrots, sliced
✅️ 2 celery stalks, sliced
✅️ 2 cups beef broth
✅️ 1 (14.5 oz) can crushed tomatoes
✅️ 1 tsp dried oregano
✅️ 1 tsp dried basil
✅️ ½ tsp red pepper flakes
✅️ 2 bay leaves
✅️ Fresh parsley, chopped (for garnish)
▶️ Instructions
1. π₯ Preheat Oven
Preheat your oven to 325°F (165°C).
2. π₯© Sear the Beef
Season beef with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned (about 4–5 minutes per side). Remove and set aside.
3. π§ SautΓ© the Veggies
In the same pot, add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.
4. π₯£ Build the Braising Liquid
Pour in beef broth and crushed tomatoes. Stir in oregano, basil, red pepper flakes, and bay leaves.
5. π² Return the Beef
Place the beef back into the pot, nestling it into the sauce. Bring to a gentle simmer.
6. π₯ Braise in Oven
Cover and transfer the pot to the preheated oven. Braise for 2.5 to 3 hours, or until the beef is fork-tender.

Remove bay leaves and discard. Shred beef with two forks. Garnish with chopped parsley and serve hot with mashed potatoes, crusty bread, or rice.
