π§Ύ Ingredients:
π₯© 3 to 4 pounds boneless beef chuck roast
π« 2 tablespoons olive oil
π§ 1 large onion, chopped
π§ 3 cloves garlic, minced
π₯ 4 medium carrots, sliced
π₯ 3 medium potatoes, diced
π₯£ 2 cups beef broth
π· 1 cup red wine (optional)
π 2 tablespoons tomato paste
πΏ 2 teaspoons dried thyme
πΏ 2 teaspoons dried rosemary

π©π³ Instructions:
1️⃣ Preheat your oven to 325°F.
2️⃣ Generously season the beef roast all over with salt and pepper.
3️⃣ Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
4️⃣ In the same pot, cook the onion until softened, about 3-4 minutes. Add garlic and cook for another minute until fragrant.
5️⃣ Stir in carrots and potatoes, cooking for about 5 minutes.
6️⃣ Add beef broth, red wine (if using), tomato paste, thyme, rosemary, and bay leaves. Stir and bring to a simmer.
7️⃣ Return the roast to the pot, making sure it’s partially submerged in the liquid. Cover with a lid.
8️⃣ Transfer the pot to the oven and roast for 3 to 4 hours, or until the beef is fork-tender.
9️⃣ Remove from oven and let the roast rest 10-15 minutes before slicing.
