A tender, flavorful beef roast slow-cooked with hearty vegetables for a classic comfort meal everyone will love.

🧾 Ingredients:

πŸ₯© 3 to 4 pounds boneless beef chuck roast

πŸ«’ 2 tablespoons olive oil

πŸ§… 1 large onion, chopped

πŸ§„ 3 cloves garlic, minced

πŸ₯• 4 medium carrots, sliced

πŸ₯” 3 medium potatoes, diced

πŸ₯£ 2 cups beef broth

🍷 1 cup red wine (optional)

πŸ… 2 tablespoons tomato paste

🌿 2 teaspoons dried thyme

🌿 2 teaspoons dried rosemary

πŸ§‚ Salt and pepper, to taste

πŸƒ 2 bay leaves

πŸ‘©‍🍳 Instructions:

1️⃣ Preheat your oven to 325°F.

2️⃣ Generously season the beef roast all over with salt and pepper.

3️⃣ Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.

4️⃣ In the same pot, cook the onion until softened, about 3-4 minutes. Add garlic and cook for another minute until fragrant.

5️⃣ Stir in carrots and potatoes, cooking for about 5 minutes.

6️⃣ Add beef broth, red wine (if using), tomato paste, thyme, rosemary, and bay leaves. Stir and bring to a simmer.

7️⃣ Return the roast to the pot, making sure it’s partially submerged in the liquid. Cover with a lid.

8️⃣ Transfer the pot to the oven and roast for 3 to 4 hours, or until the beef is fork-tender.

9️⃣ Remove from oven and let the roast rest 10-15 minutes before slicing.

πŸ”Ÿ Serve slices of roast with the veggies and spoon some of the cooking liquid over the top. Enjoy!

πŸ’‘ 3 Tips for the Best Roast:

πŸ”₯ Sear the meat well: Browning the roast before cooking adds deep flavor and locks in juices.

⏳ Don’t skip resting: Letting the roast rest keeps it juicy and easier to slice.

🍲 Use a heavy pot: A Dutch oven or heavy oven-safe pot helps distribute heat evenly for perfect slow cooking.
