๐ฅ Mississippi Mud Potatoes
๐ฅ Creamy, cheesy, bacon-loaded potatoes that everyone will fight over! Perfect for dinner sides or cozy gatherings.
๐น️ Ingredients:
◾️ 3–4 large russet potatoes, peeled and diced
◾️ 1 tbsp olive oil
◾️ Salt & pepper, to taste
◾️ 1 tsp garlic powder
◾️ 1 tsp smoked paprika (optional)
◾️ 1½ cups shredded cheddar cheese
◾️ 6 slices bacon, cooked & crumbled
◾️ ½ cup sour cream
◾️ ¼ cup mayonnaise (optional for extra creaminess)
◾️ 2–3 green onions, chopped
๐น️ Instructions:
✅️ Preheat & prep: Oven 400°F (200°C). Grease a 9x13-inch baking dish.
✅️ Season potatoes: Toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread evenly in the dish.
✅️ Bake: Cover with foil, bake 35–40 min until fork-tender.
✅️ Add goodness: Remove foil. Mix in cheese, bacon, sour cream, and mayo.
✅️ Bake again: 10–15 min uncovered, until cheese melts & bubbly.
✅️ Top & serve: Sprinkle with green onions. Serve hot!
