◾️ 1 (750 ml) bottle dry red wine
◾️ 2 dried bay leaves
◾️ 5 sprigs fresh thyme
◾️ 3 tsp kosher salt
◾️ 3/4 tsp freshly ground black pepper
◾️ 1 bunch fresh parsley leaves, for garnish

✅️ Cook bacon in a Dutch oven until crisp. Remove and set aside.
✅️ Pat beef dry, season with salt & pepper, and sear until golden. Set aside.
✅️ Add pearl onions, yellow onion, carrot, and mushrooms. Cook 6 min, then stir in garlic 1 min.
✅️ Melt butter, whisk in flour, then stir in tomato paste. Gradually add beef broth and wine, scraping browned bits.
✅️ Return beef & bacon, add bay leaves & thyme. Cover & braise in 325°F (160°C) oven 2 ½ – 3 hrs until beef is fork-tender.
✅️ Remove bay leaves & thyme. Garnish with parsley. Serve hot.
