🔹️ For the Roasted Vegetables:
◾️ 1 lb Brussels sprouts, halved
◾️ 1 small butternut squash, peeled & cubed
◾️ 4 slices bacon, chopped
◾️ 2 tbsp olive oil
◾️ Salt & pepper, to taste
◾️ 1 tsp garlic powder
◾️ 1 tsp dried thyme
🔹️ For the Toppings:
◾️ ½ cup dried cranberries
◾️ ½ cup crumbled feta cheese
◾️ 1 tbsp balsamic glaze (optional, for drizzling)

1️⃣ Preheat the Oven
• Preheat oven to 400°F (200°C).
2️⃣ Prepare the Vegetables
• In a large bowl, combine Brussels sprouts, squash, and bacon.
• Toss with olive oil, salt, pepper, garlic powder, and thyme until well coated.
3️⃣ Roast the Vegetables
• Spread mixture evenly on a baking sheet.
• Roast 25–30 minutes, stirring halfway, until sprouts are crispy & squash is tender.
4️⃣ Add Cranberries & Feta
• Remove from oven and sprinkle cranberries + feta over the roasted veggies.
• Toss gently to combine.
5️⃣ Serve
• Drizzle with balsamic glaze (if using).
