🍷 Slow-Cooked Lamb Shanks with Herb-Infused Gravy

📝 Ingredients:
◾️4 lamb shanks
◾️2 tbsp olive oil
◾️1 large onion, chopped
◾️4 garlic cloves, minced
◾️2 carrots, diced
◾️2 celery stalks, diced
◾️2 cups beef or vegetable broth
◾️1 cup red wine
◾️2 tbsp tomato paste
◾️2 tsp dried thyme
◾️2 tsp dried rosemary
◾️2 bay leaves
◾️Salt & pepper, to taste
◾️Fresh parsley, for garnish
👨🍳 Instructions:
1️⃣ Brown the Lamb:
Heat olive oil in a large skillet over medium-high heat. Sear the lamb shanks on all sides until browned. Remove and set aside.
2️⃣ Sauté the Veggies:
In the same skillet, add onions, carrots, and celery. Cook for 5 minutes until softened. Add garlic and cook for 1 minute more.
3️⃣ Build the Flavor:
Stir in tomato paste, red wine, broth, thyme, rosemary, salt, pepper, and bay leaves. Let it come to a light simmer.
4️⃣ Slow Cook:
Transfer the lamb shanks to a slow cooker. Pour the sauce mixture over them. Cover and cook on low for 6–8 hours until the lamb is tender and falling off the bone.

Remove lamb shanks and discard bay leaves. To thicken the gravy, pour the liquid into a saucepan and simmer until reduced to your desired consistency.
