๐ท๐ฅฉ Slow Cooker Lamb Ragu – Comfort in a Bowl!
Rich, hearty, and slow-cooked to perfection — this lamb ragu is the ultimate cozy meal for pasta lovers!
๐น Ingredients:
◾ 3 tbsp olive oil
◾ 1 brown onion, diced
◾ 1 kg lamb shoulder, cubed
◾ 1 tsp chili flakes (optional)
◾ 1 tsp Italian herbs
◾ Salt & pepper, to taste
➡️For the Slow Cooker:
◾ 1 cup beef stock
◾ 1 can diced tomatoes
◾ 420g can condensed tomato soup
◾ 1 celery stick, chopped
◾ 2 carrots, sliced
◾ 1 red capsicum, chopped
➡️To Serve:
◾ 500g rigatoni (or pasta of choice)
๐น Instructions:
1️⃣ Brown the Meat & Veggies
In a pan, heat olive oil. Sautรฉ onion, then add lamb shoulder, chili flakes, Italian herbs, salt, and pepper. Brown well.
2️⃣ Slow Cook the Ragu
Transfer everything to the slow cooker. Add beef stock, diced tomatoes, tomato soup, celery, carrots, and capsicum. Cook on LOW for 8 hours.
3️⃣ Cook the Pasta
About 30 minutes before the ragu is done, cook the pasta until almost al dente.
4️⃣ Combine & Serve
Stir the pasta into the slow cooker. Let flavors blend for about 10 minutes. Serve hot and enjoy! ๐๐
