4 large green tomatoes
2 eggs
½ cup milk
1 cup all-purpose flour
½ cup cornmeal
½ cup breadcrumbs
2 tsp kosher salt
¼ tsp black pepper
1 quart vegetable oil (for frying)
๐ฉ๐ณ Instructions:
1️⃣ Slice the Tomatoes
Cut into ½-inch thick slices. Discard the ends.
2️⃣ Prep the Coatings
In a bowl, whisk together eggs and milk.
Place flour on one plate.
Mix cornmeal, breadcrumbs, salt, and pepper on another plate.
3️⃣ Coat the Tomatoes
Dip each tomato slice in flour (shake off excess).
Then dip in the egg-milk mixture.
Finally, coat thoroughly in the breadcrumb mixture.
4️⃣ Fry ‘Em Up
In a large skillet, heat about ½ inch of oil over medium heat.
Fry the tomatoes in batches (don’t overcrowd!).
Cook until golden brown on both sides, flipping once.
Drain on paper towels.
