Slow Cooker Garlic Butter Beef Bites with Potatoes
Tender beef and soft potatoes in a rich garlic butter sauce—perfect for a comforting, hands-off meal!
👉Ingredients:
▶️ For the Dish:
◾️ 2 lbs (900g) beef stew meat, cubed
◾️ 1 lb (450g) baby potatoes, halved or quartered if large
◾️ 4 tbsp unsalted butter
◾️ 6 cloves garlic, minced
◾️ 1/2 cup beef broth
◾️ 1 tbsp Worcestershire sauce
◾️ 1 tsp dried thyme
◾️ 1 tsp dried rosemary
◾️ Salt and pepper, to taste
◾️ 2 tbsp olive oil
◾️ Fresh parsley, chopped (for garnish)
👉Prep & Cook Time:
🔹 Prep: 15 minutes
🔹 Slow cook: 6–7 hours on low or 3–4 hours on high
🔹 Total: 7–8 hours (mostly hands-off)
👉Instructions:
✅ 1. Sear the Beef:
➡️ Heat olive oil in a large skillet over medium-high heat.
➡️ Season beef cubes with salt and pepper.
➡️ Sear in batches, 2–3 minutes per side, until browned.
➡️ Transfer to slow cooker.
✅ 2. Make Garlic Butter Sauce:
➡️ In the same skillet, melt 2 tbsp butter.
➡️ Sauté minced garlic for ~1 minute until fragrant.
✅ 3. Add Broth & Herbs:
➡️ Pour in beef broth and Worcestershire sauce, scraping up browned bits.
➡️ Stir in thyme and rosemary.
➡️ Pour mixture over beef in slow cooker.
✅ 4. Add Potatoes:
➡️ Toss halved baby potatoes with beef and sauce.
✅ 5. Add Remaining Butter:
➡️ Place remaining 2 tbsp butter on top for extra richness.
✅ 6. Cook:
➡️ Cover and cook on low for 6–7 hours or high for 3–4 hours.
➡️ Beef should be fork-tender, potatoes cooked through.
