🍪 Soft & Chewy Pumpkin Oatmeal Cookies
👉Ingredients:
🔹 1 cup unsalted butter, softened
🔹 1 cup packed brown sugar
🔹 ½ cup granulated sugar
🔹 ¾ cup pumpkin puree
🔹 1 large egg
🔹 1 tsp vanilla extract
🔹 1½ cups all-purpose flour
🔹 1½ cups old-fashioned oats
🔹 1 tsp baking soda
🔹 1½ tsp ground cinnamon
🔹 ½ tsp ground nutmeg
🔹 ¼ tsp ground cloves
🔹 ¼ tsp salt
👉Instructions:
▶️ Preheat Oven: Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
👉 Make the Dough:
✅ In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
✅ Mix in pumpkin puree, egg, and vanilla extract until smooth.
✅ In another bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt.
✅ Gradually fold the dry ingredients into the wet mixture until combined.
➡️ Form Cookies: Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets, spacing about 2 inches apart.
🔹 Bake: Bake for 10–12 minutes, or until edges are lightly golden. Slightly underbaked centers = soft and chewy cookies!
✅ Cool & Serve: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
