Chewy Pumpkin Oatmeal Cookies


๐Ÿช Soft & Chewy Pumpkin Oatmeal Cookies


๐Ÿ‘‰Ingredients:

๐Ÿ”น 1 cup unsalted butter, softened

๐Ÿ”น 1 cup packed brown sugar

๐Ÿ”น ½ cup granulated sugar

๐Ÿ”น ¾ cup pumpkin puree

๐Ÿ”น 1 large egg

๐Ÿ”น 1 tsp vanilla extract

๐Ÿ”น 1½ cups all-purpose flour

๐Ÿ”น 1½ cups old-fashioned oats

๐Ÿ”น 1 tsp baking soda

๐Ÿ”น 1½ tsp ground cinnamon

๐Ÿ”น ½ tsp ground nutmeg

๐Ÿ”น ¼ tsp ground cloves

๐Ÿ”น ¼ tsp salt


๐Ÿ‘‰Instructions:


▶️ Preheat Oven: Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.


๐Ÿ‘‰ Make the Dough:

✅ In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

✅ Mix in pumpkin puree, egg, and vanilla extract until smooth.

✅ In another bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt.

✅ Gradually fold the dry ingredients into the wet mixture until combined.


➡️ Form Cookies: Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets, spacing about 2 inches apart.


๐Ÿ”น Bake: Bake for 10–12 minutes, or until edges are lightly golden. Slightly underbaked centers = soft and chewy cookies!


✅ Cool & Serve: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
