π½π Slow Cooker Cowboy Casserole
πΉ Ingredients:
π 1 lb ground beef
π 1 medium onion, chopped
π 1 can (15 oz) corn kernels, drained
π 1 can (15 oz) black beans, drained and rinsed
π 1 can (10 oz) diced tomatoes with green chilies
π 1 packet taco seasoning mix
π 1 cup shredded cheddar cheese
π 1 cup frozen tater tots
π 1/2 cup sour cream (optional, for serving)
π Salt & pepper to taste
πΉ Instructions:
▶️ Step 1: Cook ground beef with onion in a skillet, drain grease.
▶️ Step 2: Transfer to slow cooker + add corn, beans, tomatoes, taco seasoning. Stir well.
▶️ Step 3: Cover & cook on low 4 hrs or high 2 hrs.
▶️ Step 4: Add tater tots on top, cook 30 mins more until golden.
▶️ Step 5: Sprinkle cheese, let melt 5–10 mins.
▶️ Step 6: Serve with sour cream if desired.
