◾️ Ingredients
✅ 1 baked pie crust
✅ 1 cup sugar
✅ 2 tbsp cornstarch
✅ 1 cup water
✅ 3 egg yolks (beaten)
✅ 2 tbsp butter
✅ 1/3 cup fresh lemon juice ๐
✅ 1 tbsp lemon zest
✅ 3 egg whites
✅ 1/4 tsp cream of tartar
✅ 6 tbsp sugar (extra for meringue)
◾️ Instructions
๐น Make the filling: In a saucepan, whisk sugar, cornstarch, and water. Cook until thickened. Slowly whisk in beaten egg yolks, then stir in butter, lemon juice, and zest. Pour into the baked pie crust.
๐น Make the meringue: Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar until stiff peaks form.
๐น Assemble: Spread meringue over the hot filling, sealing the edges.
