π€ Slow Cooker Cowboy Casserole
A hearty, comforting dish loaded with beef, potatoes, beans, and cheese. Perfect for a family dinner!
✅️ Ingredients
◾️ 1 lb ground beef
◾️ 1 medium onion, chopped
◾️ 3 cloves garlic, minced
◾️ 4 medium potatoes, thinly sliced
◾️ 1 can (15 oz) diced tomatoes, drained
◾️ 1 can (15 oz) red kidney beans, drained and rinsed
◾️ 1 cup frozen corn
◾️ 1 cup shredded cheddar cheese
◾️ 1 cup beef broth
◾️ 1 can (10.5 oz) cream of mushroom soup
◾️ 1 tsp paprika
◾️ Salt & pepper, to taste
▶️ Instructions
1️⃣ Cook Beef
π Brown the ground beef with onion and garlic in a skillet. Drain excess fat.
2️⃣ Layer in Slow Cooker
π Place sliced potatoes at the bottom, then add beef, tomatoes, beans, and corn.
3️⃣ Mix Sauce
π Stir together cream of mushroom soup, beef broth, paprika, salt, and pepper. Pour evenly over the layers.
4️⃣ Cook
π Cover and cook on low (6–8 hrs) or high (4–5 hrs) until potatoes are tender.
5️⃣ Add Cheese
π In the last 15 minutes, sprinkle cheddar cheese on top and let it melt.
