π² Slow Cooker Chicken Stew

Tender chicken, creamy broth, and hearty vegetables — all slow-cooked to perfection.

π₯ Cook Time: 7–8 hours (low) or 3–4 hours (high)
✅ Ingredients:
◾️ 2 tablespoons olive oil
◾️ 1½ pounds chicken thighs, cut into 1-inch pieces
◾️ 3 tablespoons all-purpose flour
◾️ 1 teaspoon dried thyme
◾️ 1 teaspoon dried rosemary
◾️ ½ teaspoon salt, plus more to taste
◾️ 6 cloves garlic, minced
◾️ 1 onion, diced
◾️ 3 carrots, peeled and sliced
◾️ 2 large potatoes, cut into ½-inch cubes (about 1 pound)
◾️ 3 cups chicken broth
◾️ 1 bay leaf
◾️ ½ cup milk
◾️ 1 cup frozen green peas
◾️ Black pepper, to season
πΉ Instructions:
1. π Prep the Chicken:
Dice chicken into 1-inch pieces and season with salt and pepper.
2. π Sear for Flavor:
Heat olive oil in a skillet.
Brown chicken for 4–5 minutes until golden (no need to cook through).
(If your slow cooker has a stovetop-safe pot, you can brown directly in it!)
3. π Coat & Combine:
Transfer chicken to the slow cooker.
Add flour, thyme, rosemary, and salt — stir to coat evenly.
4. π Add Veggies & Broth:
Add garlic, onion, carrots, and potatoes.
Pour in chicken broth and drop in the bay leaf.
5. π Slow Cook:
Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours.
6. π Finish & Serve:
Stir in milk and frozen peas.
Cook for another 10–15 minutes on HIGH until peas are warm and stew thickens.
Adjust with more flour or broth if needed.
