π Slow Cooker Honey Garlic Chicken & Vegetables
✅️ Ingredients:
◾️ 2.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)
◾️ 1 large onion, chopped
◾️ 2 carrots, peeled and chopped
◾️ 2 celery stalks, chopped
◾️ 4 cloves garlic, minced
◾️ 1/2 cup honey
◾️ 1/4 cup low-sodium soy sauce
◾️ 2 tbsp apple cider vinegar
◾️ 1 tbsp cornstarch
◾️ 1 tsp ground ginger
◾️ 1/2 tsp red pepper flakes (optional)
◾️ 1 lb red potatoes, quartered
◾️ 1 cup broccoli florets
◾️ 2 tbsp sesame oil
◾️ 2 green onions, sliced (for garnish)
◾️ Sesame seeds (for garnish)
✅️ Instructions:
π Step 1:
◾️ Add chicken, onion, carrots, celery, and garlic to the slow cooker.
π Step 2:
◾️ In a bowl, whisk together:
➡️ honey, soy sauce, vinegar, cornstarch, ginger, and red pepper flakes.
◾️ Pour over the chicken and vegetables.
π Step 3:
◾️ Stir everything to coat evenly.
π Step 4:
◾️ Cover and cook:
➡️ Low: 6–8 hours
➡️ High: 3–4 hours
π Step 5:
◾️ Add potatoes:
➡️ Last 3 hours on Low
➡️ Last 1.5 hours on High
π Step 6:
◾️ Add broccoli:
➡️ In the last 30 minutes of cooking
π Step 7:
◾️ When done, remove from heat.
π Step 8:
◾️ Stir in sesame oil.
π Step 9:
◾️ Garnish with green onions and sesame seeds.
✅️ Pro Tip:
➡️ For a thicker sauce:
Mix 1 tbsp cornstarch + 2 tbsp cold water, then stir it in during the last 15 minutes of cooking.
