Hearty Beef Shepherd’s Pie
◾️A cozy, all-in-one meal perfect for chilly nights or holiday comfort!
👉Ingredients:
↪️1 lb ground beef
↪️1 onion, finely chopped
↪️2 garlic cloves, minced
↪️2 cups frozen mixed vegetables (peas, carrots, corn)
↪️1/4 cup beef broth
↪️1 tbsp Worcestershire sauce
↪️2 tbsp tomato paste
↪️1 tsp dried thyme
↪️Salt & black pepper to taste
↪️4 cups prepared mashed potatoes
↪️2 tbsp butter (for topping)
👉Instructions:
✅️1. Brown the beef:
In a large skillet over medium heat, cook the ground beef until fully browned. Drain off any excess grease.
✅️2. Build the flavor:
Add chopped onion and garlic to the beef. Sauté for 2–3 minutes until softened. Stir in the mixed vegetables, beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper. Let it simmer for 5–7 minutes, until the veggies are tender and most of the liquid has reduced.
✅️3. Layer it up:
Pour the beef mixture into a 9x13-inch baking dish. Spoon the mashed potatoes on top and smooth them out with a spatula. Dot the top with butter.
✅️4. Bake to perfection:
Bake in a preheated 375°F (190°C) oven for 20–25 minutes, until the top is golden and the sides are bubbling.
✅️5. Cool & serve:
Let it rest for 5 minutes before digging in.
👉3 Helpful Tips:
↪️1. Fluffier topping: Use a fork to lightly drag lines across the mashed potato layer for extra texture and crispiness when baked.
↪️2. Boost the flavor: Add a splash of red wine or a sprinkle of paprika to the filling while it simmers for a deeper, richer taste.
↪️3. Make ahead: Assemble the pie in advance and refrigerate—just add 10 more minutes to baking time if cooking straight from the fridge.
