👉Ingredients:
◾️3–4 lbs chuck roast
◾️1½ lbs baby potatoes, halved
◾️4 large carrots, peeled and chopped
◾️1 yellow onion, sliced
◾️4 garlic cloves, minced
◾️3 cups beef broth
◾️2 tbsp Worcestershire sauce (Wan Ja Shan Organic if preferred)
◾️2 tbsp tomato paste
◾️1 tsp dried thyme
◾️1 tsp dried rosemary
◾️1 tsp salt
◾️½ tsp black pepper
◾️2 tbsp olive oil
◾️3 tbsp cornstarch + 3 tbsp water (for slurry)
◾️Fresh parsley for garnish
👉Instructions:
✅️1. Heat olive oil in a skillet over medium-high heat. Sear the chuck roast for about 4 minutes per side until it’s nicely browned—this adds great flavor.
✅️2. Place the roast in the slow cooker and arrange the potatoes, carrots, onion, and garlic around it.
✅️3. In a bowl, mix together the beef broth, Worcestershire sauce, tomato paste, thyme, rosemary, salt, and pepper. Pour this over everything in the slow cooker.
✅️4. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the meat is fork-tender.
✅️5. Remove the roast and vegetables. Stir the cornstarch slurry into the cooking liquid and let it simmer until thickened—about 5 minutes.
