Irresistible Crockpot French Onion Meatloaf with Melted Swiss



Rich, cheesy, and melt-in-your-mouth delicious — this meatloaf takes comfort food to the next level.

๐Ÿฝ️ Ingredients

◾️ 2 lbs ground beef

◾️ 1 cup breadcrumbs

◾️ 1/2 cup grated Parmesan cheese

◾️ 1/4 cup milk

◾️ 2 large eggs

◾️ 1 tbsp Worcestershire sauce

◾️ 1 tsp salt

◾️ 1/2 tsp black pepper

◾️ 2 large onions, thinly sliced

◾️ 2 tbsp butter

◾️ 1 cup beef broth

◾️ 8 slices Swiss cheese


๐Ÿ‘จ‍๐Ÿณ Instructions:


1. ๐Ÿ”ธ Mix the Meatloaf

In a large bowl, combine:

beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire, salt, and pepper.

Mix until everything is well combined.


2. ๐Ÿ”ธ Shape & Place

Form into a loaf shape and place it directly into your crockpot.


3. ๐Ÿ”ธ Caramelize the Onions

In a skillet, melt butter over medium heat. Add sliced onions and cook for 20–25 minutes, stirring occasionally, until golden and caramelized.


4. ๐Ÿ”ธ Deglaze

Pour in the beef broth and simmer until the liquid is mostly absorbed. Then pour the onion mixture over the meatloaf in the crockpot.


5. ๐Ÿ”ธ Slow Cook

Cover and cook on LOW for 6–8 hours, or until fully cooked through.


6. ๐Ÿ”ธ Add the Cheese

About 10 minutes before serving, top with Swiss cheese slices and let them melt. Cover the lid briefly to help it melt faster.


7. ๐Ÿ”ธ Serve

Slice and serve warm with extra onions on top. ๐Ÿคค Perfect with mashed potatoes or crusty bread!
