🥩🍷 Slow-Cooked Beef Bourguignon

◾️ 2 lbs beef chuck, cut into 1-inch cubes
◾️ 1 tbsp olive oil
◾️ 1 large onion, chopped
◾️ 2 cloves garlic, minced
◾️ 1 tbsp tomato paste
◾️ 2 cups red wine (preferably Burgundy)
◾️ 2 cups beef broth
◾️ 2 bay leaves
◾️ 1 tsp dried thyme
◾️ 3 carrots, peeled & sliced
◾️ 2 potatoes, peeled & diced
◾️ 1 cup pearl onions, peeled
◾️ 1/2 cup mushrooms, sliced
◾️ 1 tbsp flour + water (for thickening)
◾️ Salt & black pepper to taste
👨🍳 Directions:
1. 🔥 Brown the Beef
Heat olive oil in a skillet over medium heat. Brown beef cubes in batches, then transfer to the slow cooker.
2. 🧄 Sauté the Aromatics
In the same skillet, sauté chopped onions and garlic for 3–4 minutes until soft. Add tomato paste and cook for 1 more minute.
3. 🍷 Deglaze with Wine
Pour in the red wine, scraping up the browned bits. Bring to a boil and simmer for 5 minutes to reduce slightly.
4. 🍲 Build the Base
Transfer wine mixture to the slow cooker. Add beef broth, bay leaves, and thyme. Stir to combine.
5. 🕒 Slow Cook
Cover and cook on LOW for 7–8 hours, until beef is fork-tender.
6. 🥕 Add Veggies
In the last 30 minutes, add carrots, potatoes, pearl onions, and mushrooms.
7. 🥄 Thicken the Sauce
Mix flour with a splash of water to make a slurry. Stir it into the stew to thicken. Let it cook 10–15 more minutes.
8. 🧂 Season & Serve
