π Ingredients
• 1.75 lb chuck beef, cut into bite-sized cubes (about 800g)
• 2 tbsp all-purpose flour
• 1 medium onion, chopped
• 3 medium carrots, sliced
• 3 medium potatoes, diced
• 2 cups beef broth (or stock)
• 2 tbsp tomato paste
• 2 tbsp olive oil
• 1 tsp dried thyme (or 1 tbsp fresh)
• Salt and black pepper, to taste
π¨π³ Instructions
1️⃣ Coat & Sear the Beef:
In a large pot or Dutch oven, heat olive oil over medium-high heat. Toss beef cubes in flour and brown them on all sides (about 5–7 minutes).
2️⃣ Add Onion & Tomato Paste:
Add chopped onion. Cook for 3 minutes until softened. Stir in tomato paste and cook for 1 minute.
3️⃣ Simmer:
Pour in beef broth, add thyme, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour and 15 minutes.
4️⃣ Add Veggies:
Add potatoes and carrots. Simmer for another 45 minutes, or until meat and vegetables are tender and broth is rich and slightly thickened.
π₯ Optional Finishing Touch:
For deeper flavor, stir in 1 tbsp Worcestershire sauce or 1/4 cup red wine while simmering.
