One-Pan Garlic Herb Chicken with Potatoes & Green Beans 🍗🥔🌿
👉Ingredients:
For the Garlic-Herb Butter:
◾️ ¼ cup chicken broth
◾️ ¼ cup melted butter
◾️ 4 cloves garlic, minced
◾️ 1 Tbsp fresh parsley, chopped
◾️ ½ Tbsp fresh thyme, chopped (or ½ tsp dried)
◾️ Salt & pepper, to taste
On the Sheet Pan:
◾️ 4 boneless, skinless chicken breasts
◾️ 1 bag (about 20 oz) baby potatoes, halved
◾️ 1 lb fresh green beans, trimmed and halved
◾️ Olive or avocado oil for coating
◾️ Salt & pepper, to taste
👉Instructions:
↪️ Step 1: Preheat & Make Herb Butter
✅ Preheat oven to 425°F (220°C).
✅ In a small bowl, whisk together melted butter, chicken broth, garlic, parsley, thyme, salt, and pepper.
↪️ Step 2: Arrange Chicken & Potatoes
✅ Line a sheet pan with parchment paper.
✅ Place chicken breasts in the center and arrange potato halves around them.
✅ Drizzle or spray olive oil over everything and season with salt and pepper.
✅ Pour the garlic-herb butter evenly over the chicken and potatoes.
↪️ Step 3: Roast Initial Stage
✅ Bake for 15 minutes to let the chicken juices and herb butter flavor the potatoes.
↪️ Step 4: Add Green Beans
✅ Remove the pan and add trimmed green beans.
✅ Gently toss the veggies and potatoes so they’re coated in the garlic herb butter.
↪️ Step 5: Finish Roasting
✅ Return to oven and roast 10–12 more minutes until chicken hits 165°F and potatoes are tender.
✅ Optional: Broil for 2–3 minutes for a crispy top.
↪️ Step 6: Slice, Garnish & Serve
✅ Let chicken rest a few minutes, then slice.
✅ Garnish with chopped parsley if desired.
