◾️2 boneless, skinless chicken breasts (cut into bite-sized pieces)
◾️12 oz rotini pasta
◾️1 cup heavy cream
◾️1 cup shredded mozzarella cheese
◾️½ cup chicken broth
◾️½ cup grated Parmesan cheese
◾️½ cup shredded cheddar cheese
◾️2 tbsp olive oil
◾️2 tbsp Cajun seasoning
◾️4 garlic cloves, minced
◾️1 tbsp butter
◾️1 tsp garlic powder
◾️½ tsp onion powder
◾️Salt & pepper, to taste
◾️Fresh chopped parsley (for garnish)

1️⃣ Cook the Pasta
Bring a large pot of salted water to a boil. Add the rotini and cook until al dente. Drain and set aside.
2️⃣ Cook the Chicken
Heat olive oil in a large skillet over medium-high heat.
Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
Cook for about 6–7 minutes until golden and cooked through. Remove from skillet and set aside.
3️⃣ Make the Sauce
In the same skillet, melt butter and sautรฉ the minced garlic for 1 minute.
Add chicken broth and heavy cream; bring to a gentle simmer.
Gradually stir in mozzarella, Parmesan, and cheddar until smooth and creamy.
4️⃣ Combine
Return the cooked chicken and pasta to the skillet.
Toss everything together so it’s well coated in the cheesy Cajun sauce.
Let simmer for 2–3 minutes to blend flavors.
5️⃣ Serve
Sprinkle with chopped parsley (and more cheese if desired).
