๐ฎ๐น Italian Pot Roast
Slow-cooked beef in a rich tomato and herb sauce—comforting, hearty, and full of bold Italian flavor.
◾️ Ingredients:
๐น️ 3 lbs (1.4 kg) beef chuck roast
๐น️ 2 tablespoons olive oil
๐น️ 1 large onion, chopped
๐น️ 3 cloves garlic, minced
๐น️ 2 carrots, chopped
๐น️ 2 celery stalks, chopped
๐น️ 1 cup red wine
๐น️ 1 cup beef broth
๐น️ 1 can (14.5 oz) crushed tomatoes
๐น️ 2 tablespoons tomato paste
๐น️ 1 teaspoon dried thyme
๐น️ 1 teaspoon dried rosemary
๐น️ 2 bay leaves
๐น️ Salt and pepper, to taste
๐น️ Fresh parsley, chopped (for garnish)
◾️ Directions:
↪️ Preheat oven to 325°F (160°C).
↪️ Season the beef roast generously with salt and pepper.
↪️ In a large oven-safe pot or Dutch oven, heat olive oil and sear the beef on all sides (about 5 minutes per side). Remove and set aside.
↪️ In the same pot, sautรฉ the onion, garlic, carrots, and celery for 5–7 minutes until softened.
↪️ Add red wine and scrape up any browned bits from the bottom of the pot. Simmer for 3 minutes.
↪️ Stir in beef broth, crushed tomatoes, tomato paste, thyme, rosemary, and bay leaves.
↪️ Return the beef to the pot and spoon some of the sauce and vegetables over it.
↪️ Cover with a lid and transfer to the oven. Roast for 3 to 3.5 hours, or until the beef is tender and easily shredded.
↪️ Let rest for 10 minutes before slicing.
↪️ Garnish with chopped parsley and serve with mashed potatoes, polenta, or crusty bread.
