👉Ingredients:

➡️For the Roast:

◾️ Salt & black pepper

◾️ 1 tbsp olive oil

◾️ 2 cups beef broth

◾️ 1 tbsp Worcestershire sauce

◾️ 1 tsp thyme or rosemary

◾️ 1/3 cup milk or heavy cream

◾️ 4 tbsp butter

👉Instructions

1️⃣ Sear the Meat – Season roast well, sear in hot oil until browned on all sides.

2️⃣ Build the Base – Sauté onion & garlic, stir in tomato paste, broth, Worcestershire, and herbs. Scrape all flavor from the pot.

3️⃣ Slow Cook – Return beef, cover, and cook low & slow (3–4 hrs stovetop or 300°F in oven) until fork-tender.

4️⃣ Make Mash – Boil potatoes, drain, then mash with butter & cream until smooth.

5️⃣ Gravy – Thicken pan juices with cornstarch slurry if desired.

6️⃣ Serve – Plate mashed potatoes, top with beef slices, and pour over rich gravy.
