๐๐ Easy Chicken Stroganoff
A creamy, savory dish with tender chicken, mushrooms, and a rich sour cream sauce served over egg noodles. Comfort food made simple!
๐ Ingredients
↪️For the Chicken:
◾ 1 lb boneless, skinless chicken breast (or thighs), bite-sized pieces
◾ 2 tbsp olive oil or butter
◾ Salt & pepper, to taste
For the Sauce & Veggies:
◾ 1 small onion, diced
◾ 2 cloves garlic, minced
◾ 8 oz mushrooms, sliced
◾ 2 cups chicken broth
◾ 1 tbsp Dijon mustard
◾ 1 tsp paprika
◾ 1 tbsp cornstarch (mixed with 2 tbsp water)
◾ ½ cup sour cream
For Serving:
◾ 12 oz egg noodles (or pasta of choice)
◾ Fresh parsley, chopped (for garnish)
๐ Instructions:
1️⃣ Cook the Chicken
◾ Heat olive oil in a large skillet over medium-high heat.
◾ Add chicken, season with salt & pepper, and cook 5–7 min until browned & cooked through.
◾ Remove and set aside.
2️⃣ Sautรฉ the Veggies
◾ In the same skillet, sautรฉ onions & mushrooms for 5 min.
◾ Add garlic, cook 1 more min.
3️⃣ Make the Sauce
◾ Stir in chicken broth, Dijon mustard, paprika, and cornstarch slurry.
◾ Simmer 2–3 min until slightly thickened.
4️⃣ Combine & Finish
◾ Return chicken to skillet.
◾ Stir in sour cream, heat gently (don’t boil).
◾ Adjust seasoning with salt & pepper.
5️⃣ Cook the Noodles
◾ Meanwhile, boil egg noodles according to package directions.
◾ Drain and toss with a little butter if desired.
6️⃣ Serve
◾ Spoon chicken stroganoff over noodles.
◾ Garnish with fresh parsley & enjoy warm.
