✅ Ingredients (Serves 4):
➡️ 4 bone-in pork chops (about 1 inch thick)
➡️ 1.5 lbs small red potatoes (halved or quartered if large)
➡️ 1 medium onion, thinly sliced
➡️ 1/2 cup honey
➡️ 1/4 cup low-sodium soy sauce
➡️ 2 tbsp rice vinegar
➡️ 2 cloves garlic, minced
➡️ 1 tbsp Dijon mustard
➡️ 1 tsp ground ginger
➡️ 1/2 tsp black pepper
๐น Instructions:
1️⃣ Make the sauce – Whisk together honey, soy sauce, rice vinegar, garlic, mustard, ginger, and black pepper. (5 min)
2️⃣ Layer the slow cooker – Place sliced onion on the bottom, then arrange pork chops on top. (5 min)
3️⃣ Add sauce & potatoes – Pour sauce evenly over pork chops. Add potatoes around the meat, making sure they’re coated. (5 min)
4️⃣ Cook – Cover and cook:

๐ธ High: 3–4 hours
(Pork should reach 145°F and potatoes fork-tender.)
5️⃣ Finish & serve – Remove pork and potatoes. Optional: thicken sauce on stovetop before serving. (5 min)
