A melt-in-your-mouth ribeye slow-cooked in garlic butter, paired with creamy, cheesy mashed potatoes. Comfort food at its finest! π―
π Ingredients:
For the Garlic Butter Ribeye:
1 lb ribeye steak, cut into large chunks
Salt & pepper, to taste
4 tbsp butter
4 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/2 cup beef broth
Fresh parsley, chopped (for garnish)
For the Parmesan Mashed Potatoes:
6 medium potatoes, peeled & cubed
1/2 cup milk (more if needed)
1/4 cup butter
1/2 cup grated Parmesan cheese
Salt & pepper, to taste
Chives or green onions, chopped (for garnish)
π©π³ Directions:
1️⃣ Slow Cook the Ribeye
Season ribeye chunks with salt & pepper. Place in slow cooker with butter, garlic, thyme, rosemary, and beef broth. Cook on low for 4–5 hours until tender.
2️⃣ Boil Potatoes
About 30 minutes before serving, boil potatoes in salted water until fork-tender (15–20 minutes). Drain well.
3️⃣ Make it Creamy
Mash potatoes with milk, butter, and Parmesan until smooth. Adjust with more milk if needed. Season to taste.
4️⃣ Serve & Enjoy
Plate mashed potatoes, top with garlic butter ribeye, and garnish with parsley & chives.
