➡️ 4 chicken thighs (bone-in, skin-on)
➡️ 500g potatoes, chopped into chunks
➡️ 2 carrots, sliced
➡️ 1 cup mushrooms, sliced or halved
➡️ 3 tbsp olive oil
➡️ 2 garlic cloves, minced
➡️ 1 tsp dried thyme
➡️ 1 tsp dried rosemary
➡️ 1 tsp parsley flakes
➡️ ½ tsp paprika
➡️ Salt & pepper to taste
➡️ Juice of ½ lemon (optional)
➡️ Chopped fresh parsley, for serving

◾️ 1. Preheat Oven:
Preheat to 200°C / 400°F.
◾️ 2. Mix Marinade:
