A light, wholesome, and protein-rich meal that’s both satisfying and full of flavor!
👉Ingredients:
↪️1 grilled chicken breast, sliced
↪️2 cups romaine or mixed leafy greens
↪️½ avocado, diced
↪️½ cup cherry tomatoes, halved or chopped
↪️½ cup cucumber, sliced
↪️½ cup grilled corn
↪️1 tbsp olive oil
↪️½ tsp black pepper
↪️½ tsp garlic powder
↪️½ tsp sea salt
↪️½ tsp chili flakes (optional)
🔸️🔸️For the Creamy Avocado Dressing:
↪️½ ripe avocado
↪️¼ cup plain Greek yogurt
↪️1 tbsp fresh lemon juice
↪️1 garlic clove, minced
↪️2 tbsp olive oil
↪️½ tsp salt
↪️½ tsp black pepper
👉Instructions:
✅️1. Grill the Chicken:
Season the chicken with salt, pepper, and garlic powder.
Grill for 5–6 minutes per side or until fully cooked. Let it rest, then slice.
✅️2. Make the Dressing:
In a blender or food processor, combine the avocado, Greek yogurt, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
✅️3. Build the Salad Bowl:
Place the greens in a bowl. Top with diced avocado, cherry tomatoes, cucumber slices, and grilled corn.
✅️4. Add Chicken and Dressing:
Arrange the sliced grilled chicken on top. Drizzle with avocado dressing and sprinkle with chili flakes if desired.
