Healthy, quick, and bursting with fresh Mediterranean flavor!

This easy one-skillet meal brings together juicy ground beef, vibrant veggies, bold spices, and a tangy lemon-feta finish. Ready in under 30 minutes — perfect for weeknights!


๐Ÿ›’ Ingredients:


↪️1 lb ground beef


↪️1 tbsp olive oil


↪️1 small red onion, thinly sliced


↪️2 cloves garlic, minced


↪️1 zucchini, sliced into half-moons


↪️1 red bell pepper, sliced


↪️½ cup cherry tomatoes, halved


↪️¼ cup Kalamata olives, sliced


↪️1 tsp dried oregano


↪️½ tsp ground cumin


↪️½ tsp smoked paprika


↪️½ tsp salt


↪️¼ tsp black pepper


↪️½ cup crumbled feta cheese


↪️2 tbsp fresh parsley, chopped


↪️Juice of ½ lemon

✅️1. Sautรฉ Onion & Garlic:

Heat olive oil in a large skillet over medium heat. Add red onion and cook 2–3 minutes until softened. Add garlic and cook 30 seconds more until fragrant.


✅️2. Brown the Beef:

Add ground beef to the skillet. Break it apart with a spoon and cook until browned and fully cooked through (about 5–7 minutes). Drain excess fat if needed.


✅️3. Add Veggies & Seasonings:

Stir in zucchini, bell pepper, cherry tomatoes, and olives. Season with oregano, cumin, smoked paprika, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until veggies are tender but still crisp.


✅️4. Finish with Lemon & Feta:

Remove from heat. Squeeze fresh lemon juice over the stir fry and toss to combine. Top with crumbled feta and chopped parsley.


✅️5. Serve & Enjoy:

Serve warm as is, or pair with rice, quinoa, or warm pita bread for a complete Mediterranean-style meal.
