π₯£ Beef Barley Soup
π² A hearty, cozy soup packed with tender beef, barley, and veggies – perfect for a filling meal!
⭐ Ingredients
πΉ 1 lb beef stew meat, diced
πΉ 1 tbsp olive oil
πΉ 1 onion, diced
πΉ 3 carrots, diced
πΉ 2 celery stalks, diced
πΉ 3 cloves garlic, minced
πΉ 6 cups beef broth
πΉ 3/4 cup barley
πΉ 2 bay leaves
πΉ Salt & black pepper, to taste
πΉ Fresh parsley, chopped (for garnish)
π©π³ Directions
π Brown the Beef: Heat olive oil in a large pot. Add beef and cook until browned. Remove & set aside.
π SautΓ© Veggies: Add onion, carrots, celery & garlic. Cook 5 minutes until softened.
π Simmer the Soup: Return beef. Add broth, barley & bay leaves. Bring to boil ➡️ simmer 45–60 minutes.
π Serve & Enjoy: Season with salt & pepper. Garnish with parsley πΏ.
