A wholesome, cozy soup packed with beans, veggies, and Italian herbs — the perfect bowl for chilly days!


◾️ Ingredients

πŸ”Ή️1 can (15 oz) white beans, drained & rinsed (cannellini or great northern) 🫘

πŸ”Ή️4 cups low-sodium vegetable or chicken broth 🍲

πŸ”Ή️2 cups chopped kale or spinach πŸ₯¬

πŸ”Ή️1 tsp dried oregano 🌿

1️⃣ SautΓ© Vegetables

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.


2️⃣ Add Tomatoes & Beans

Stir in diced tomatoes and white beans. Mix well.


3️⃣ Pour in Broth & Season

Add broth, basil, oregano, thyme, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.


4️⃣ Add Greens

Stir in kale or spinach and simmer another 5 minutes, until wilted and tender.


5️⃣ Serve & Enjoy

Remove bay leaf. Ladle into bowls and serve warm with crusty bread! πŸ₯–✨
