π² Hearty Tuscan White Bean Soup
A wholesome, cozy soup packed with beans, veggies, and Italian herbs — the perfect bowl for chilly days!
◾️ Ingredients
πΉ️1 tbsp olive oil (or cooking spray for lighter version)
πΉ️1 onion, chopped π§
πΉ️2 garlic cloves, minced π§
πΉ️2 carrots, diced π₯
πΉ️2 celery stalks, diced πΏ
πΉ️1 can (14.5 oz) diced tomatoes (no added salt) π
πΉ️1 can (15 oz) white beans, drained & rinsed (cannellini or great northern) π«
πΉ️4 cups low-sodium vegetable or chicken broth π²
πΉ️2 cups chopped kale or spinach π₯¬
πΉ️1 tsp dried basil π±
πΉ️1 tsp dried oregano πΏ
πΉ️1/2 tsp dried thyme πΌ
πΉ️Salt & pepper to taste π§
πΉ️1 bay leaf (optional) π
π Instructions
1️⃣ SautΓ© Vegetables
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
2️⃣ Add Tomatoes & Beans
Stir in diced tomatoes and white beans. Mix well.
3️⃣ Pour in Broth & Season
Add broth, basil, oregano, thyme, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
4️⃣ Add Greens
Stir in kale or spinach and simmer another 5 minutes, until wilted and tender.
5️⃣ Serve & Enjoy
Remove bay leaf. Ladle into bowls and serve warm with crusty bread! π₯✨
